New development of freshness indicators for packaged meat products

These intelligent indicators focus on providing the user, in a direct way and in real time, information about the packaged product's quality based on the released metabolites during the product spoilage.

The expiration date stated on fresh product packaging is one of the main factors in consumers’ buying decision. However, its shelf life may decrease depending on storage conditions and handling of the product, besides that expiration dates are generally conservative.

For these reasons, the Packaging, Transport and Logistics Research Center (ITENE) is developing the INDIFRESH project, based on freshness indicators that monitor shelf life of packaged meat products. These intelligent indicators focus on providing the user, in a direct way and in real time, information about the packaged product’s quality based on the released metabolites during the product spoilage.

With INDIFRESH is expected to mainly develop indicator inks that change color according to the packaged meat freshness and also design printable indicators to conventional industrial processes and they to be easily understood by users.
